The category, briefly
A service robot does useful work in a space occupied by ordinary people. That one sentence carries most of the engineering consequences. There is no cage, no fixed workspace, no assumption that everything in the room is where it was a minute ago, and no possibility of training the public.

The four jobs
Everything Hybot's robots do reduces to four task types — deliver an order, collect an order, deliver a bill, collect dishes — plus the simpler primitive of going to a named place. They share a shape: known start, known end, and something carried or somebody followed.
That shape is why the technology works in a restaurant and also in a warehouse. A bench is a table with a different name.
What this category is not
It is not automation of judgement. A machine that reliably carries plates does not thereby understand service. The venues that get value from these robots are the ones that identified the walking as the cost and left the judgement with staff.
